Ingredients:
- ½ kg vigna mungo
- ½ kg moong bean
- one pinch baking
- ½ inch ginger grated
- half teaspoon black pepper powder
- 2 green chili chopped
- 4 teaspoons grated coconut
- ½ teaspoon red chili powder
- ½ teaspoon roasted cumin
- tamarind Sour-sweet sauce
- 2 cups curd whisked
- half teaspoon black salt
- oil as per taste
Preparations:
Soak vigna mungo and moong bean for 5 to 6 hours.
After this, remove the skin of both the pulses and drain the water.
Now grind both the pulses coarsely in a mixer or divide them into silbatas.
- Mix grated coconut , chopped green chillies, ginger, baking soda and salt in the paste of lentils .
take oil in pan and keep on low-medium heat.
When the oil is hot, make a large portion of the paste in a round shape and fry the vadas till they turn golden in oil.
Now take lukewarm in a vessel and put fried vadas in it.
- When they become very soft, then press one vada between the palms and squeeze their water.
- Add yogurt to these vadas.
Serve by adding cumin powder, red chili powder, black salt, sauce and salt over the curd.
Do this to make soft dahi vadas
- By adding a little curd to the back or batter of dahi vada, the vadas become soft and the oil also absorbs less.
- While making dahi-vada, if you add one teaspoon of sugar to the curd, then its taste will increase.
If you mash 1-2 boiled potatoes in the back of a dahi vada, it will become soft and tasty. Adding equal quantity of
Vigna mungo and moong bean makes vadis tasty.
To make dahi vada more crisp, one teaspoon curd and a pinch of baking powder can also be added.
- Add moong and vigna mungo, while making curd big, add a big spoonful of flour and whisk the batter and it will become round and white.
- Do not make dahi vada on hands and wet clothes, by applying ghee or oil on polythene and if the vadas are spread on it, then their softness will remain intact.
