Ingredients for Shahi Pulao:-

  • 1 cup basmati rice
  • 1/2 tsp Cumin 
  • 2 bay leaves
  • 5 cardamom
  • 4 black cardamom
  • 8-9 black pepper 
  • 5-6 clove
  • 1/3 tablespoon cashew
  • 2 tablespoon raisins
  • 2 tablespoon ghee
  • 2 cup water
  • 2 onions (cut slice)
  • Coriander leaves (chopped) 

How to Preparation of Shahi Pulao:-

1. Clean the rice and soak it in 2 cups of water for 20 minutes.

2. And keep the rice in a sieve and drain its water. Do not throw water, because we will make rice in this water.

3. Wash the raisins and wipe it with the kitchen paper and keep it aside.

4. Heat the ghee on a low flame in a vessel. Now add cumin, bay leaves, black peeper, clove, green cardamom, black cardamom, and roast for 30 seconds. When the masala is roasted, it will smell like fry.

5. Now add cashews to it and roast it for 1 minute.

6. Now add the soaked rice and raisins, mix all the ingredients properly and roast for 2 minutes. attention to the rice while it is running and allow the rice to break. Stir the rice lightly. Now add water to it, 1 cup basmati rice takes 2 cups of water. After a boil, reduce the heat and let the rice cook till it gets tender. It takes 12-15 minutes to cook the rice, turn off the gas after the rice is cooked.

7. Now take some ghee in a pan and heat it a little, after that put the onion slices and fry them properly until the onion slices turn red. After that, put from all sides on top of the rice. And along with that give Coriander Leaves all the side of the rice.

8. Tasty shahi pulao is ready after making it, you can survey it with chicken curry, mutton stew, chicken tikka masala.
