Preparation of Egg Bhurji Recipe
1
To make boil egg bhurji, first boil the eggs and peel them and fry them. Before frying, make a hole on the egg with the help of fog. So that when the egg is fry, do not get splashed with oil, this process is optional if you do not want it.
2
To fry the eggs, put a tablespoon of oil in a non stick pan and keep it for heating. When the oil is hot, add the eggs one by one to the oil. While placing the eggs in the pan, cover the pan so that no oil splashes over you.
3
Stir fry the eggs on medium flame for one minute. In one to one and a half minutes, a light golden color comes on top of the eggs, then take out the eggs in a plate.
4
Put three tablespoons of oil in the second pan and keep it for heating. Once the oil is hot, add bay leaves, cinnamon, cloves, mace and cumin. Roast for 10 seconds while stirring. Now add green chili and chopped onion and fry it for two to three minutes.
5
In two to three minutes, the onion will turn slightly brown, now add ginger and garlic paste and fry it while stirring. Cook it while stirring for a minute to remove the rawness of the ginger-garlic.
As soon as the rawness of ginger-garlic is over, add turmeric powder, red chilli powder, coriander powder, cumin powder and black pepper powder and mix it while stirring.
6
Cook the spices with the onion for a minute, now add chopped tomatoes. Also add salt so that the tomatoes cook quickly, cook it for five to seven minutes until the tomatoes are melted.
So many tomatoes are cooking, cut so many eggs, I cut the eggs lengthwise into four pieces. If you want, you can also make small pieces of it, if you do not eat yolk then remove it.
7
Open the tomatoes and check our tomatoes are melted after the time. If you want to smooth out the texture of the spices, then mash the spices with a potato mesher, this will prevent tomato peels from appearing.
8
Now our masala is ready, now add green coriander and garam masala to the spices and mix the ingredients together. Then pour the eggs in the spices and slow down the flame.
Mix it with light hands, do not mix with hands too fast, otherwise the eggs will become pudding. The masala should be well coated over the eggs, just mix the eggs with the spices in the same way.
9
Now cover it and cook it for a minute by putting it on the damper; After a minute, open the khular again and mix the egg with spices. Our spicy boiled egg bhurji is ready, turn off the gas and drain all the vegetables in a serving bowl.
This dish is becoming very popular in Maharashtra where it is eaten with pav. You can eat it with roti or paratha as well. It looks very good with that, put some green coriander over it. Our masala egg bhurji is ready.
