Ingredients:
For the cake:
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ¾ cup unsweetened cocoa powder
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup hot water
- 1 cup fresh strawberries, mashed
For the frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- ¼ cup heavy cream
- 1 tsp vanilla extract
- ¼ cup pureed strawberries (for flavor and color)
For decoration:
- Fresh strawberries, sliced
- Heart-shaped sprinkles or edible glitter (optional)
Instructions:
Preheat the oven: Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
Prepare the cake batter:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, mix the eggs, milk, vegetable oil, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and mix well until combined.
- Stir in the hot water and mashed strawberries until the batter is smooth (it will be slightly runny).
Bake the cake: Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare the frosting:
- In a large mixing bowl, beat the softened butter until smooth and creamy.
- Gradually add the powdered sugar, ½ cup at a time, and beat until fluffy.
- Add the heavy cream, vanilla extract, and pureed strawberries. Continue to beat until the frosting is smooth and creamy.
Assemble the cake: Once the cakes are completely cool, place one layer on your serving plate. Spread a generous amount of strawberry frosting over it. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
Decorate: Top with fresh strawberry slices, heart-shaped sprinkles, or edible glitter to give it that special Valentine's Day touch.
